OK boys and girls, this dish is like the queen of easy dinner dishes, and it really only consists of super-healthy super foods. So, if you decide to eat this, your body will be thanking you for supplying it with only the most delicious and nutritious foods!
What you’ll need:
1 serving cooked quinoa (or more if you are feeding multiple mouths)
Chopped vegetables of your choice (When I make this I’ll use Kale, Broccoli, Tomatoes, Asparagus, Bell Peppers, Chic Peas… Anything goes!)
1 T Olive Oil
3 T Fresh Lemon Juice
1 garlic clove, minced
Salt and Pepper to taste
What to do:
1.) If possible, steam your vegetables to cook them. If not, saute them in olive oil and onion until warmed.
2.To make the Mediterranean dressing, mix the olive oil, lemon juice, and minced garlic together.
3. Mix the cooked quinoa, cooked vegetables, and Mediterranean dressing all together in a large bowl and then enjoy!
